BLT Pasta Salad combines crisp bacon, juicy tomatoes, tender pasta, and fresh romaine in a creamy dressing for a flavorful and satisfying cold dish.

Ingredients

12 ounces rotini or bow tie pasta
8 slices thick-cut bacon
1 1/2 cups cherry tomatoes halved
2 cups chopped romaine lettuce
1/4 cup finely diced red onion optional
1 cup mayonnaise
1 tablespoon lemon juice or apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions

  • Cook pasta in salted boiling water until al dente. Drain and cool.

  • Cook bacon in a skillet until crisp. Drain and chop.

  • Whisk mayonnaise, lemon juice or vinegar, Dijon mustard, salt, and pepper.

  • In a large bowl combine pasta, bacon, tomatoes, and onion if using.

  • Stir in dressing until evenly coated.

  • Fold in chopped romaine just before serving.

  • Chill for 30 minutes before serving.
