3 cups cooked pasta (rotini or penne)
2 cups cooked chicken breast, diced or shredded
1/2 cup mayonnaise
1/2 cup sour cream
3 cloves garlic, minced
1/3 cup grated Parmesan cheese
1/2 cup celery, chopped
1 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook pasta in salted water according to package directions until tender.
Drain pasta and rinse briefly with cool water.
Allow pasta to drain completely and transfer it to a large bowl.
In another bowl combine mayonnaise, sour cream, garlic, Parmesan, salt, and pepper.
Stir the dressing until smooth and creamy.
Add cooked chicken to the pasta.
Add celery, tomatoes, red onion, and parsley.
Pour the garlic dressing over the mixture.
Toss gently until the pasta and chicken are fully coated.
Cover and refrigerate for at least 30 minutes before serving.
Stir the salad again and garnish with extra parsley if desired.
