Experience the perfect harmony of sweet mango and savory salmon in this quick, flavorful, and visually stunning dish. Ideal for weeknights or special occasions, it’s a recipe that’s both impressive and easy to prepare.

Ingredients

·         4 salmon fillets, skin-on (6 oz each)

·         1 large ripe mango, peeled and diced

·         1/3 cup low-sodium soy sauce

·         2 tablespoons honey

·         1 tablespoon rice vinegar

·         2 garlic cloves, minced

·         1 teaspoon freshly grated ginger

·         1 tablespoon sesame oil

·         1 tablespoon cornstarch

·         2 tablespoons water

·         1 tablespoon olive oil

·         2 green onions, thinly sliced (for garnish)

·         Sesame seeds, for garnish

·         Salt and black pepper, to taste

Instructions

1.      In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger to make the teriyaki sauce.

2.      Puree diced mango in a blender. In a small saucepan over medium heat, combine mango puree with teriyaki sauce. Stir in cornstarch mixed with water and cook 3-5 minutes until thickened.

3.      Pat salmon dry, brush with olive oil, and season with salt and pepper.

4.      Heat a skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes, flip, and cook 3-4 more minutes.

5.      Spoon mango teriyaki glaze over salmon, simmer 1-2 minutes.

6.      Serve salmon with extra glaze, garnished with green onions and sesame seeds.

Notes

·         Use ripe mangoes for natural sweetness.

·         Adjust glaze consistency with water if too thick.

·         Salmon can be cooked skin-on or skinless.

·         Glaze can be prepared in advance for convenience.
