This baked salmon recipe features fresh lime, cilantro, and a creamy avocado salsa for a quick, healthy, and flavorful weeknight meal.

Ingredients

    • 4 salmon fillets (about 6 oz / 170 g each)
    • 2 tablespoons olive oil (30 ml)
    • 3 tablespoons fresh lime juice (45 ml)
    • 1 teaspoon lime zest
    • 3 cloves garlic, minced
    • 3 tablespoons fresh cilantro, chopped
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    For the Avocado Salsa

    • 2 ripe avocados, diced
    • 1 cup cherry tomatoes, diced (150 g)
    • 1/4 cup red onion, finely chopped (40 g)
    • 2 tablespoons fresh cilantro, chopped
    • 2 tablespoons fresh lime juice (30 ml)
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a small bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, salt, and black pepper.
  3. Place the salmon fillets in the baking dish and brush the marinade evenly over each piece.
  4. Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
  5. While the salmon bakes, combine all avocado salsa ingredients in a bowl and gently mix.
  6. Remove salmon from the oven and top each fillet with avocado salsa before serving.
