  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 large head broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 25–30 minutes, flipping halfway.
  2. Season salmon with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and cook salmon 4–5 minutes per side.
  3. Melt butter in a small saucepan, add garlic, lemon juice, and zest. Drizzle over cooked salmon.
  4. Sauté broccoli in olive oil for 4–5 minutes. Season with salt, pepper, and lemon juice.
  5. Plate salmon, potatoes, and broccoli. Garnish with parsley and serve.
