2 large cucumbers thinly sliced
1 small red onion thinly sliced
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic minced
2 tablespoons fresh parsley chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Wash cucumbers and slice them into thin rounds.
Thinly slice the red onion and add it to a bowl with the cucumbers.
