A wholesome one-pot Serbian rice dish with tender chicken paprika and vegetables simmered together for a comforting balanced meal.

Ingredients

2 tablespoons olive oil
1 medium onion finely chopped
2 cloves garlic minced
400 grams chicken breast diced
1 red bell pepper diced
2 tablespoons tomato paste
400 grams canned chopped tomatoes
1 teaspoon sweet paprika
1/4 teaspoon smoked paprika optional
1 1/2 cups long-grain rice rinsed
3 cups low-sodium chicken broth
1 bay leaf
Salt and black pepper to taste
Fresh parsley for garnish optional

Instructions

  • Heat olive oil in a large pot over medium heat and sauté onion until translucent.

  • Add garlic and cook briefly until fragrant.

  • Stir in diced chicken and cook until lightly browned.

  • Add paprika salt and pepper and stir well.

  • Mix in bell pepper and tomato paste and cook for 1 to 2 minutes.

  • Add chopped tomatoes rice chicken broth and bay leaf and stir.

  • Bring to a gentle simmer then cover and cook on low for 18 to 20 minutes.

  • Remove bay leaf and let rest for 5 minutes before serving.

  • Garnish with fresh parsley if desired.
