A wholesome one-pot Serbian rice dish with tender chicken paprika and vegetables simmered together for a comforting balanced meal.
2 tablespoons olive oil
1 medium onion finely chopped
2 cloves garlic minced
400 grams chicken breast diced
1 red bell pepper diced
2 tablespoons tomato paste
400 grams canned chopped tomatoes
1 teaspoon sweet paprika
1/4 teaspoon smoked paprika optional
1 1/2 cups long-grain rice rinsed
3 cups low-sodium chicken broth
1 bay leaf
Salt and black pepper to taste
Fresh parsley for garnish optional
Heat olive oil in a large pot over medium heat and sauté onion until translucent.
Add garlic and cook briefly until fragrant.
Stir in diced chicken and cook until lightly browned.
Add paprika salt and pepper and stir well.
Mix in bell pepper and tomato paste and cook for 1 to 2 minutes.
Add chopped tomatoes rice chicken broth and bay leaf and stir.
Bring to a gentle simmer then cover and cook on low for 18 to 20 minutes.
Remove bay leaf and let rest for 5 minutes before serving.
Garnish with fresh parsley if desired.
