· Salmon fillets: 4 fillets (about 170 g / 6 oz each)
· Pomegranate juice: 240 ml (1 cup)
· Fresh orange juice: 120 ml (½ cup)
· Orange zest: 1 tablespoon
· Honey: 3 tablespoons
· Fresh lemon juice: 1 tablespoon
· Garlic, minced: 2 cloves
· Olive oil: 2 tablespoons
· Salt: 1 teaspoon
· Black pepper: ½ teaspoon
· Cornstarch: 1 teaspoon
· Water: 2 tablespoons
· Pomegranate seeds (garnish): ¼ cup
· Fresh parsley or cilantro, chopped: 2 tablespoons
1. In a saucepan, combine pomegranate juice, orange juice, orange zest, honey, lemon juice, and garlic. Simmer for 8–10 minutes.
